hi guys we're gonna make the most delicious harissa chicken tray bake

its a beautiful colorful Mediterranean style meal, full of flavors

so we got chicken beautiful sweet peppers onion mint
我们准备了全鸡、甜椒、洋葱、薄荷
and we've got the most important ingredient harissa
以及最重要的哈里萨辣酱
so good a lovely mixture of chilies and spices delicious
超赞的辣酱，干辣椒和调料的完美组合，美味
look at these peppers they're so beautiful

just push in the little core
捏开
I want to get rid of the seeds
把辣椒籽取出来
and then just tear it up into rough sized chunks

I've got two onions here, cut them into quarters
这儿准备了两个洋葱，切成四分之一大小
kind of unpick them like little petals
再把洋葱像花瓣一样剥开
mix this up
抓匀
look at the colors so beautiful
看这颜色，太漂亮了
season it nice sea salt
来点儿海盐调味
pepper as well
再来点儿胡椒粉
we're gonna go in with some extra virgin olive oil
再倒两茶匙特级橄榄油
just a couple of nice tablespoons
两三茶匙就好
and a little swig of vinegar
再来点儿醋
vinegar really helps to bring the flavor out of everything
醋非常有助于提取各种食材的味道
and then you get the sweetness from the peppers and onions
之后，辣椒以及洋葱的甜味
and the sourness from the vinegar
醋的酸味就全都出来了
sweet and sour so it's gonna taste absolutely amazing

and then I'm gonna use some harissa now

harissa is a North African paste chili paste
哈里萨辣椒是一种东非的辣椒酱
they come in different flavors
哈里萨辣酱有各种味道
but basically it's pounded out dry chilies with oil
但主要还是用干辣椒和油做的
and different versions of spices and the flavor is phenomenal
各种各样的辣椒，味道超级好闻
four nice teaspoons goes into our tray here
这个盘子里咱们放四茶匙
and you can rub it on vegetables, on fish
你也可以把它抓在蔬菜或者鱼里
and in this case it's going all over the chicken peppers
今天咱们就放在鸡上
and that will make all the difference

give this a nice little mix

then I've got a little trick for the chicken
接下来，我有一个切鸡的秘诀
put it in the tray hold it nice and firmly
把鸡立在托盘里，抓紧了
and then get the tip of the knife at the top of the carcass

and run your knife down
把刀划下去
let the knife do the work
让刀来发力
carefully cut that down
小心切下来
and then we can open up like a book

now the legs take longer to cook than the breasts

so we can intervene

and what we can do is cut right down to the bone, right

to allow the heat in

but not just the heat the flavor right

so what we're doing is we're evening up the cooking times

we're making it look more appealing
我们要让这个鸡看上去让人更有食欲
and literally I'm rubbing the harissa and the oil and all those flavors
老实说，我正在抹这个辣酱和油，所有的味道
inside and outside the chicken

the flavors gonna be so good

and then we're gonna lay that chicken on top of the veggies

let me wash my hands

a little bit of sea salt on top

and then in the oven we go for 50 minutes to an hour
现在放到烤箱里烤50分钟到一个小时
at 180 degrees Celsius which is 350 degrees Fahrenheit
温度调到180度，也就是350华氏度
and when that cooks it's gonna be amazing
烤熟了之后一定会超漂亮
the chicken will cook into the veg
鸡肉的味道会渗透到蔬菜里
the veg will steam up and flavor the chicken
蔬菜的味道也会上窜到鸡肉里，给鸡肉提味儿
It is a beautiful beautiful harmony

that harissa has mixed with all the stuff that would normally make a beautiful gravy

so you get this sauce

and you just want to scrape that down

and then put that back over the chicken

beautiful fresh mint over the top so fragrant

chili and the spices and all the sticky goodness

serve that with some rice, little flat breads, tacos

you know some nice little cookies

absolutely beautiful
