In the meantime let me tell you about Liz and her dad.

Liz's dad was called Micheal and he loved to cook.

The memory of his Lamb Balti has really stuck with Liz.

She vividly remembers him sourcing all the spices,

which was much more difficult and unusual in the 80s then it is now.

There's so many layers of flavours going into this dish.

Cumin, garam masala, cardamom,

and it's made with beautiful lamb shoulder.

It's going to be really good, you've got to try this.

I'm going to start by toasting the spices.
我准备先炒点儿香料
I'm using Hotpoint induction hob which heats up nice and fast
我用的是Hotpoint的电磁炉，加热很快，而且火力比较均匀
and I'm going to get a pan on medium heat.
中火热锅
Add in 2 teaspoons of coriander seeds and 1 teaspoon of cumin seeds.
放入2勺芫荽籽，1勺孜然芹籽
Dry roast that for around 1 minute.
烘差不多1分钟
So I'm going to get these into the pestle and mortar now.
现在把它们倒进研钵里
I'm going to give it a good bash.
捣碎
Once these have ground up
捣好以后
I'm going to add half a teaspoon of chili powder,
加入半勺辣椒面
half a teaspoon of turmeric powder, One teaspoon of garam masala,
半勺姜黄根粉，一勺什香粉
3 to 4 green cardamom pods, and 2 bay leaves.
三四个绿色的豆蔻荚，两片月桂叶
Mix this up and leave it aside for the time being.
搅拌均匀，放一会儿
We are now going to get on with the Balti sauce.
现在我们要准备咖喱酱了
We are going to get the pan back on the hob on medium heat.
还是开中火
Start with 2 tablespoons of vegetable oil in the pan.
先放两勺植物油
Grate in 2cm of fresh ginger, and a large clove of garlic, Fry that for a minute or two.
擦差不多两厘米长的鲜酱，一大瓣蒜，炒一两分钟
The first time Liz's dad made this
Liz的爸爸第一次做这个的时候
he forgot to put the lid on the mixer and it was everywhere!
他忘了盖上锅盖，结果弄的满屋子都是味儿
so the kids chipped in and had to clear it all up before mum came back.
孩子们不得不一起来帮忙，赶在妈妈回家之前把房子收拾干净
So today I'm going to grate 3 onions, we're going to skip the blender.
今天，我要擦三个洋葱，我们就不用搅拌机了
This needs to cook down nice and slowly for 10-15 minutes until soft and golden.
把洋葱炒软，炒出汁儿，炒至金黄色，慢慢炒差不多十到十五分钟
This is really nice deep golden colour
这种深金黄色真的超漂亮
and all these caramelized onions
这些炒成糖色的洋葱
are going to add this beautiful flavour to the sauce
会给咖喱酱增添一股美丽的风味
and it's ready for the tomatoes.
现在已经可以下西红柿了
Now I would use fresh tomatoes
是我的话我就会用新鲜的西红柿，
but Liz's dad said that life's too short for that
但是Liz的爸爸说，用新鲜西红柿简直就是在浪费生命
so he preferred using tin tomatoes and that's what i'm doing today.
他喜欢用罐装的西红柿，我今天准备就按他的做法来
Squash it all with your hands.
用手把西红柿捏碎
Add in the wonderful spices and give it a good mix.
把我们美美的香料倒进去，搅拌均匀
Pour over 500ml of boiling water,
倒500多毫升的水
We'll simmer this for 30 minutes and give it an occasional stir.
小火慢炖半小时，不时搅拌一下
Another spice I'm gonna add to this is dried methi leaves.
我要放的另一个香料是感到葫芦巴叶
Now this is not easily available
现在这个东西已经不容易找到了
and this is something Liz's dad would have liked
但是Liz的爸爸很喜欢用这个，
because he liked to go out and look for these particular spices.
因为他喜欢出去找这些特别的香料
So it should bring Liz's memories flooding back.
所以，这个东西应该能唤起Liz满满的回忆
I've also got half a teaspoon of tamarind paste,
我还要放半勺的罗望子酱
half a teaspoon of honey and a pinch of salt.
半勺蜂蜜和一撮盐
The sauce is ready now
酱我们已经准备好了
so I'm going to move it aside and get on with the lamb.
所以现在我要把它端到一边，准备做我们的羊肉
And for this dish
做这道菜
I've done my usual trick
我采用了我一惯的方法
and marinated big chunky shoulder meat with yogurt and lots more spices.
用酸奶和各种香料来腌羊肉
I mixed 100ml of natural yogurt
混合100ml的无添加酸奶
with a tablespoon of ground coriander
和一勺芫荽籽磨成的粉，
and a teaspoon each of ground cumin, ground ginger, chilli powder, turmeric and salt.
孜然芹粉，姜粉，辣椒面，姜黄根粉，盐各来一勺
I mixed that in with chunks of lamb.
把它们和羊肉混合均匀
Then I covered it and left it in the fridge for 2 hours.
包好放入冰箱静置2小时
Now it's ready
现在2个小时已经过去啦
I'm going to seal the meat in 1 tablespoon of vegetable oil
我们下锅，先来一勺植物油
and I'm going to fry these in batches.
羊肉分成小块儿煎
Keep turning it and make sure it's brown all around.
不停地翻动，确保每个地方都炸到
Once your lamb is all nice and brown
羊肉每个地方都变成棕黄色之后
you're gonna stir it through into this lovely sauce.
放到酱里面搅拌均匀
You're gonna get the lid on
盖上盖子
and this is going to go into my Hotpoint oven at 170C, 325 Fahrenheit.
我们把它放进Hotpoint的烤箱烤一下，温度设置为170摄氏度，也就是325华氏度
Give that an hour and a half.
烤一个半小时
This is gonna make the lamb really tender
烤出来的羊肉会非常嫩
and all the juices will go in and it's really good.
并且充分吸收酱汁以后口感会非常棒
Wow! That smells so so good.
哇！闻起来香得不行啊
This should bring Liz's memories flooding back.
这道菜肯定能唤起Liz满满的回忆
