not gonna say winter because it can be use at any season

really nice hearty warm vegetable bean soup
非常好的暖心蔬菜豌豆汤
which actually I do for my children every week, or not necessarily this one,
我每周都会给孩子们做这道汤，虽然不一定完全一样，
but I kind of vary up the soups weekly, and my husband, that's it.
但是我都是在这个汤的基础上加的花样，还有给我的老公，是的。
thank gosh, it's such a good soup.
我的天，这个汤也太好喝了。
I've got two leeks, but it like four, they've been cut into two, washed
准备两颗大葱，看上去像是四颗，因为我们已经对半切开了，把大葱洗净
and a good tip from Jamie is he told me to do is to wash downwards,
吉米给我分享了一个小窍门，就是洗的时候大葱朝下
they get all dirt out and use it like bit like a little river.
这样，污垢就能顺着小河一样的大葱流出来
so this will probably feed about four to six.
我们今天做的是4-6个人的量
so just chop, you can do smaller if you prefer, but my children quite like a bit of chunk
就这样切段，喜欢的话你也可以切短一点，但我的孩子们喜欢长一点
so we're not really smooth soup family, so I mashed it like this
我们家的人都不太喜欢很碎的汤，所以我就切成这样
two sticks of celery, washed, three carrots, she need some the chopped
两段芹菜，洗净，三根胡萝卜，切段
and two cloves of garlic, thinly sliced,
再来两瓣蒜，切薄片
you could always use a garlic crusher if you fancy
喜欢的话也可以用压蒜器
so that's all my vege done
我的蔬菜就都准备好啦
so I'm going do some bacon, I've got just two rushes, just chop that
接下来切点儿培根，这是两片培根，切小条
you don't have to use bacon, it does add a really nice flavor
大家有可以不放培根，只是放了会更香
and if you were doing this for a baby,
如果是做给小孩子喝的话，
obviously you wouldn't be doing the seasoning and you wouldn't use the bacon
当然就不用放调味料也不用放培根了，
so you can just take that out and just have a really nice vegetable soup, and then blend it
把这些都去掉也能做出一锅很好的蔬菜汤，搭配一下就好了
so now I'm gonna start cooking, this is my my really mad oven, on a log of olive oil
现在开始煮这个汤，就用这个超级赞的燃气灶，倒点儿橄榄油
first one that do the bacon with some rosemary,
首先，我们要把培根和迷迭香放一起炒一下，
just a sprig of rosemary is all you need to get all the strong flavors going
只要一小枝迷迭香，炒出来的味道就会非常浓郁
so now I can hear the sizzle, that's when you know all the flavors are coming back the rosamaria
听到滋滋滋的声音就表示迷迭香的味道已经出来了。
they're all kind of implementing together, you can smell it, now it's so delicious
迷迭香和培根的味道结合在一起，闻起来非常非常香
this should take about a couple of minutes, just so it goes nice and brown
我们要再炒两三分钟，炒至金黄色
right, definitely brown and crispy,
好了，绝对金黄酥脆，
so I'm gonna add all the vege, you know it's been great for children
现在把蔬菜都放进去，蔬菜对小孩子非常好
and is one way of getting everything in all at once
所有的营养也都有了
and I always feel so good when I see they've eaten this,
看他们喜欢喝这个汤我也特别开心
I feel like it's been really really healthy dinner, and just mix it around
这样做出来的菜非常非常健康，搅拌一下
your need about 10 to 15 minutes, just make sure the leeks get really sweet nice and soft and tender
这样炒10-15分钟，让大葱炒出来很甜很软
I'm gonna put the lid on to sweat them down, and leave it for ten to fifteen minutes to get it do the jobs
盖上盖子，留住菜里的水分，煮10-15分钟
so reckon this is done, they look yeah, they don't just look really nice and they smell pretty good as well
感觉应该好了，看着，嗯，不仅好看，闻起来也很香。
so they're definitely ready
现在肯定熟了
now I'm gonna add Lottie beans, but you can actually use any canned beans you like
现在把洛蒂豆放进去，也可以放你喜欢的豆子
my children like these, that's quite nice
我们家的孩子喜欢这种豆，用这个豆也不错。
well you know we might do this for ballet day or athletic set
他们要学芭蕾舞或是运动的时候就可以做这个，你们懂的
so I really want they've got enough energy to kind of do that what they have to do
我非常希望他们有足够的精力做他们要做的事情
and those beans will definitely help that
这些豆子绝对可以帮上忙
I'm gonna add some chicken soup into the veg and I've got a liter of stock there
现在倒一些鸡汤进去，这是一升的鸡汤
also make a bit quicker, I use a hot stock, so it keeps everything going and boiling at the same time
加入鸡汤比加水煮得更快，我用的是已经煮开的鸡汤，蔬菜和鸡汤同时煮的
put it back to simmer for about half an hour
再次盖上盖子，小火慢炖半小时
I reckon this is done now, yet it's nice and soft,
我感觉已经煮好了，现在已经熟了，而且很漂亮
we're gonna add a handful of frozen peas and then two handfuls of kale
现在我们放入一把冷冻的青豆，两把甘蓝
the girls like kale but you can do spinach or courgettes
我们家的女孩子喜欢吃甘蓝，你们也可以放菠菜或者小胡瓜
or anything doesn't need a lot of cooking time, so it stays really nice bright and green
只要不需要煮很久的都可以，这样煮出来的汤颜色才会很鲜亮
so I'll just mix it in put the lid on for a couple of minutes
搅拌之后盖上盖子，再煮两分钟
and then prepare the bowls and we're ready
准备碗筷，就可以啦
because actually this soup hasn't got really much of carbohydrates in
因为这个汤里的碳水化合物并不多
so I sometimes add pasta or I'm I've got some bread here,
所以有时候我会再配一点意大利面，这里有一些面包
we could even have potatos, sweet potatoes just to get that bit more chunkier feeling
还可以搭配土豆，甘薯来搭配蔬菜汤生脆的口感
I do especially for my children because they've been busy at school
我会这么做是因为孩子们在学校很辛苦
I think it's kind of quite help them to do that
喝这个汤能够给他们提供充分的能量
go some nice hunts of bread which they really like
来几片他们非常喜欢的面包
so that's my cup. so you can see the leeks are sweated off
那个是我的杯子，看见没，葱里的水分都熬出来了
I can smell, actually all the lovely smells the bacon and the rosemary

and the fresh greens are going every nice kind of fresh feel
还有新鲜的蔬菜，每样食材都非常新鲜
and then they're not to ever cooked at all, so that'd be nice and crunchy still
而且都没有特别熟，口感还是很生脆很美味的
and the stalks are juicy there, so portion up, so I've got one for Buds and one for myself
菜的汤汁很丰富，现在我们盛到碗里，一份给Buds，一份给我自己
because it's such a good soup and it's really quick
这个汤非常营养，而且做起来非常快
actually I normally cook my soup the day before,
事实上我会提前一天把这个汤做好
if you're going to do a good batch and freeze it
如果你一次做好几份，然后冰冻好
perhaps don't add the green vegetables like the kale or the courgette because it will keep its vibrancy
或许你可以先不放大葱或者胡瓜之类的蔬菜，这样才能保留蔬菜的新鲜度
so if you defrost it put it in the hob then just the same as you did before adds the greens at the end
只要把汤拿出来解冻，开火，然后按照刚才的步骤来一遍，最后放蔬菜，
and then they're really fresh and lovely and they can keep the crunch
这样做出来也很新鲜，很美味，口感也很生脆
