牡蛎的另类吃法

last year I went on a cook's tour of Canada, traveling from east to west

去年我踏上了寻找加拿大美食之旅,从东到西,
I got to sample some of the best food this country has to offer,

but there's one dish from one restaurant that I can't get out of my mind
但有一家店的有一道菜,是我一直难以忘怀的,
so I'm back in Montreal, a hot bit of culture and culinary art, to sample that dish and learn more about it

Going to Maison Publique to eat that always said it's maybe traveled halfway around the world

I am famous for my toaster, yeah absolutely.

Well what was the inspiration behind this crazy dish
你怎么想到要做这么另类的菜的?
When I lived in in London,
住在伦敦的时候,
I had one roommate who would eat Marmite on toast, but he'd toast the bread, butter, Marmite and then sliced cucumbers
我有一个室友会吃烤马麦酱,但是是和面包、黄油、马麦酱以及腌黄瓜一起烤的。
and that was a new one for me
对我来说那是一种新吃法,
and then when I was a kid, used to go down with my dad to the beach and we used to pull it off the beach

West Coast oysters taste like cucumbers

l was like, oh, they taste like cucumbers

maybe we can incorporate some Marmite into it to make it a bit of an umami tsunami sort of thing you know

and then it was born

These are beaching Oysters from Quadra Island in British Columbia

not too far from Tifina, very far from dinner, yeah very far from Tifina.

So we just lightly steam them, so let the oyster, the meat just set
我们先稍微把牡蛎蒸一下,让里面的肉定个型
so you pop these guys open
把这些家伙撬开
when we make the the mayonnaise, we we do use some of the liquid that comes out of it
做蛋黄酱的时候,我们会用一些这个汁儿。
and so how did you meet Jamie

when I moved to London, I was young and he had just opened 15 and I went to go eat

and then somebody came over asks if I was interested in the stuff,

Ok, you have to answer some questions. Yeah.

and they say you looks like a cook, I said yeah, I'm a cook from Canada

They said oh we're looking for cooks, he asked me to come and do a trial.

We have all the things, please come in and do it now.

To complete the dish is just regular button mushrooms, which I really love button mushrooms

some people don't think they're fancy enough I think they're delicious
有些人觉得它们不够高级,但我觉得草菇的味道非常棒。
I just cooked way way down and nothing in no garlic no show off, nothing.
我就用最最简单的办法,不放蒜,也不要点缀,什么都不用。
just dry in the pan, let the salt, let the water come out
只要在锅里稍微煎一下,让里面的盐和水析出来,
put them down a little bit of time and that's it
再放一会儿就可以了。
and they start to caramelize a little bit
再让它稍微烤一烤
so there's just a few mushrooms in the bottom just raw onions
先垫点儿草菇,再来点儿葱花
these are not really cooked in the end anyway
这些到最后口感都带点儿生
they just sort of warm through but they had that little, little crunch, little bit of,
只会热一点点,还带点儿……带点儿脆
额额

yeah like the sort of Nia onion flavor, we just slice them up into three

没错,就是带点儿葱花的味道,把牡蛎切成三段。
it's so cool for me to see what's what went into it because it's really simple
见证这道菜的过程以及用到的食材,真是让人大饱眼福。做起来也很简单。
it's like when you know nothing about it and you eat it for the first time
感觉就像第一次见一种你从来没吃过的东西一样。
it really is like what hell is going on in there, it's amazing

I don't really have a signature dish, I guess this is it, but I've known for like a baked oyster,
说实话,我并没有一道招牌菜,硬说有的话就是这个了,但我最有人气的还是烤生蚝,
so why Montreal
那你为什么又选择留在蒙特利尔呢?
Never been here before, growing up in the west coast
因为从来没来过啊,我是在西岸长大的,
I sort of knew it was going on there and wanted to see something new
我只知道那里的生活是什么样的,所以我想看看别的地方
and then bought a one-way ticket to Montreal and then never left
我就买了一张到蒙特利尔的单程票,然后就再也没回去了。
this is probably one of the oldest cities in the country you know
蒙特利尔可能是加拿大最古老的城市了。
so everything basically came through here

so it's widely multicultural, I mean, we have a lot of inspiration to and influences to draw from

French, Portuguese, Italian, Russian, Lebanese

and that's whatever kind of blessed in Canada, we have a culinary identity, but it's very multicultural

yes, it's a great place to come here and experience Canada through the food for sure

I agree, so this is the Marmite manace,
没错,这个就是我们疯狂的马麦酱
we make it like basically amenities with lots of lots of egg yolks
因为我们要放超多的蛋黄酱,
it just gets nice and glazy, let's make it like a regular mayonnaise except for we put a little bit of mustard
看起来就会很漂亮,闪闪发光,我们用的是普通的蛋黄酱,但我们还加了一点儿芥末酱,
but English mustard, it's kind of Marmite and everything.
英式的芥末酱
and then the Marmite and so if you make a very thick manage he's let it out with little bit of water
接下来是马麦酱,如果放的特别多的话可以稍微滴点儿水稀释一下。
we let it up with a little bit of the oyster juice

pinch of cayenne, lemon juice, holly, hell.

That's like five hundred mils of mayo it's a lot

so now we bake. now we bake.

so 375-400 into the oven for about 12 minutes

you want the main aims to start bubbling around the edges

just like a lasagna you know you know it's ready when it starts to bubble chrisp and brown the edges

so they stand upright usually get one, because you're so handsome you're gonna get to tear

Now you have eaten the whole shebang huh

no manners at the stage, good food makes you lose your manners
镜头面前也顾不得什么形象了,美食就是会让一个人顾不上风范。
It's bringing all the memories back like a year ago, familiar and just being my having a revelation
一年前的回忆全部回来了,太熟悉了,简直是打开了我记忆的闸门。
exactly and then you get something as a revelation and it really reminds you why food so important
没错,当你遇到一个开关,马上就能让满满的回忆涌上心头。
why you're going to food in the first place in it Jill to mean makes you fall in love with it all over again
让你想起你第一次为什么会选择这个餐厅,同时也让你重新爱上它。
that is the best oyster in the world
