美味的印度蛤蜊咖喱

Guys welcome to a new episode of Fish Tales

And today I'm at this amazing fishery, a clam fishery in the south west of India.
今天我来到了印度西南部神奇的蛤蜊渔场。
on a small Island called San Sebastian near Kollam.
该渔场位于科勒姆附近一个叫圣塞巴斯蒂安的小岛上。
And I'm making a beautiful Indian clam curry.
我在做美味的印度蛤蜊咖喱。
So lets start making this awesome curry guys.
所以朋友们,让我们开始这道很棒的咖喱菜吧。
I'm going to start by chopping a red onion.
先切一个红葱。
I'm not chopping this really fine.
不用切太细。
Cutting the chili. Also in not small pieces.
辣椒也是,也不要切成小块。
Garlic and I chop them again roughly.
大蒜,我再把它们切碎。
Cut the tomato And ginger.
切番茄、姜。
So guys all the ingredients are here.
所有的原料都已准备就绪。
I take my pan and now add 5 or 6 tablespoons of coconut oil.
拿平底锅,加入5或6汤匙椰子油。
If you cannot find coconut oil, use regular vegetable oil.
如果找不到椰子油,就用普通的植物油。
So I will put this on my beautiful open fire here. and I will bring this boil up to heat.
把锅放在篝火上烧热。
Now I would love to tell more about this beautiful fishery.
现在我想多多介绍一下这个美丽的渔场。
The way these fishermen collect the clams is really special.
这里的渔民收集蛤蜊的方式真的很特别。
As soon as the sun is rising the fishermen head out on the lake on the little wooden canoes.
太阳一升起,渔民们就乘小木筏出海。
On the bottom they kick the clams with their feet in a net.
他们站在水中,用脚在网中踢蛤蜊。
All without any special equipment.
没有任何特殊装备。
This is traditional, this is the most authentic fishery I know.

So when their canoe is full of clams they all return to their homes, where the women of the family will sort, open and clean every clam, one by one.

When they are done with this process they will bring the clams to one central dock to load them off in to trucks for the market.
分类清洗完之后,渔民们将蛤蜊带到中央码头,把它们装上卡车运往市场。
This is a really sustainable way of fishing, and set an example to the world.
这是一种非常可持续的捕鱼方式,为世界树立榜样。
So first up, onion.
首先,放洋葱。
Ok guys let it simmer for a while until you hear this beautiful simmering sound.
好了,朋友们,让它慢炖一会儿,一直炖到听到声音为止。
I add some chili, the green and red chili. Add some garlic. And some curry leaves, beautiful green curry leaves.
加一些绿辣椒和红辣椒,一些大蒜,还有一些漂亮的咖喱叶。
Ok guys you let it fry until it starts colouring which is really important for your curry.

Now it's time for the ginger. And stir again.

So 1 teaspoon of tumeric powder.
放1茶匙姜黄粉。
And 1 and half teaspoon of chili powder. Look at these colours.
再加1.5茶匙辣椒粉,看这些颜色。
2 teaspoons of coriander powder. Tomatoes and a bit of black pepper.
2茶匙香菜粉,西红柿和一点黑胡椒。
And now the hero ingredient, the beautiful clams here from this lake.

I take a double handful So guys I cover this with a lid. Until all clams are open.

So this beautiful Indian clam curry is now ready.

The colours, the flavours, it smells so good.
色香味俱全。
