So tonight's really exciting because it's just a chef's night

there's this lovely very humble very talented young chef called Josh.

He's just got a different way of looking at things so I thought like you know Nathan's like our fish God

and then Yannick over here is like the next gen so I thought with me sandwiched in the middle it's like a nice little sandwich

So I'm cooking octopus the amazing thing about octopus is it gives the most incredible broth.

So you'll have pasta, you'll have this broth tender but crispy octopus and it's something a bit different.

So I'm gonna do the main course holdover sole this is gonna simply roast
