Guys, the sun is out, the barbecue is on, it's that time of year. Come on, let's cook some beautiful food.

So we're gonna do surf and turf meat and fish and we will do a salad like you've never had before. Not boring.

We're gonna have big flavors, mangoes, coconut, grated carrot, lime, herbs, beautiful bit of chillies.

Get ourselves a lovely big bowl. So I just want a fresh fresh dressing.

So for that I'm going to use two lovely limes.

If you want to get more juice out of your lime, give it a little roll.

If you've got a little fine grater, this little bit of green zest is amazing.

Not the white part, that's bitter, but the green part is phenomenally fragrant.

Lime and mango are seriously best friends. Okay, so we'll have the juice going in here, squeeze it in every last bit, don't waste any.

I want to go in with some nice olive oil and then a nice seasoning of salt, pepper and if you want to kind of accent it a little bit of chili now. This is scotch bonnet.

So it's got a bit of a kick but scotch bonnet is probably my favorite chili.

You can see I'm only using a little bit of it, right? That goes into here and this is going to be amazing.

And then with regards to herbs, fresh mint, just roll it up like this and then slice it up so that is going to be a fantastic dressing.

So mango I like to put my knife in and feel where that little stone is and then you just kind of cut around that stone , twizzle it around.

And we'll do exactly the same again, hit the stone, I can feel it and then you just very gently go around it.

So we've got the sides of mango here. Now we'll cut them into three and then I just put the tip of the knife between the skin and the flesh and literally just run it in like a little flat line like that.

So we've got these lovely chunks of mango. So we want this salad to be exciting, so nice big mouthful chunks.

So we'll go in with the chunks. Look at that and then this little bit of kind of seed here and the skin.

Just grab that and squeeze the juice out. Let's get some spring onions. So I'll just take the ends off.

Then I just want to finely slice the lovely spring onions like that.

So in with the spring onions like that and then beautiful cashew nuts, a nice big handful. Let's go in with the carrot.

You can either grate it or if you want to practice a bit of knife skills, just slice them up and do them into little matchsticks.

So in with the carrot. Let's get a coconut into this beautiful salad.

In your hand something heavy like a rolling pin, a nice little confident thwack. There you go, lovely beautiful.

If you just kind of get the tip of your knife in, you should be able to just prize out that nut in a nice beautiful way and what I want to do now is just grab myself a little box grater.

Get that lovely coconut and just grate it. So grate all of that coconut up and look at that all that lovely pearly white coconut.

So let's sprinkle that into our salad. So I'll pick some whole mint leaves in.

Let's just give this a nice little toss. Look at the colors, absolutely beautiful and that lovely dressing.

So look, there's our little salad. So there you go lovely people an exciting salad with that mango, cashews, the coconut, the mint, the chili.
