The modern bakery is almost as clean as a hospital room and as bright and sunny as the home kitchen. The men and women who make the bread are dressed in white clothing and wear white caps, and they are required to keep themselves and their surroundings spotlessly clean. An army of experts work constantly testing, weighing. yes, even tasting, to see that every loaf of bread comes up to standard. So today we may have almost perfect bread—white bread, rye bread, whole-wheat bread, which many people consider more healthful, and Graham bread (named for the man who believed in leaving all the bran in the flour). We have also a great variety of rolls and buns, to say nothing of all the cakes made in bakeries today.
